If you're looking for ways to make the holidays a little less indulgent but still flavorful (and nutritious), try this reimagined pumpkin pie. The cottage cheese provides a protein hit and the canned pumpkin brings along good stuff like potassium and fibre. This dessert is quick and easy, and better yet, it isn't loaded with sugar and fat! You don't have to sacrifice the honest-to-goodness pumpkin pie on Christmas Day, but this makes a great addition to a holiday potluck as a less 'naughty' contribution this December ; )

Ingredients
1 cup low-fat cottage cheese
1 can pumpkin puree (not pumpkin pie filling)
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1 tsp Stevia sweetener (or 1/2 cup granulated sugar if preferred)
Spoon into small bowls, jars or mugs.
Add toppings as desired (i.e. whipped cream, pecans, caramel sauce)
Preparation
Combine all ingredients (except toppings) into a food processor.
Blend until you reach your desired consistency.
Pour the mixture into a bowl, cup or mug.
Top with your favorites such as a dollop of whipped cream, pecans or caramel sauce and enjoy!
