About the Recipe

Pomegranates are another fruit that contain antioxidants, which are beneficial for reducing inflammation and oxidative stress in the brain, both of which are linked to a higher risk of dementia. Coupled with the leafy greens, this salad is one of my favorites for providing a great natural source of vitamins. The olive oil in the dressing will also give you the benefit of the Omega 3 fatty acids that your brain thrives on.

Ingredients

Salad

7 cups mixed spring greens

1 can mandarin orange segments, drained

1/2 cup fresh pomegranate seeds (or cranberries)

1/2 cup crumbled feta cheese

1/2 cup chopped candied pecans


Dressing

1/3 cup good olive oil

1 tablespoon honey

2 teaspoons Dijon mustard

2 tablespoons apple cider vinegar

1 shallot, minced

Salt and pepper to taste

Preparation

  • Place the mixed greens, oranges, pomegranate seeds, feta cheese and pecans in a large bowl.

  • Place all the dressing ingredients in a small bowl, whisk until smooth.

  • Drizzle the dressing over the salad mixture to taste, then gently toss to coat. You may have dressing left over. Serve immediately.
